🔴Homemade Salt and Black Pepper Potato Chips
  


🔵INGREDIENTS
1  bottle  Vegetable Oil
3-4 russet potatoes
1 tsp.  salt
1 tsp. cracked black pepper

🔵How to do
400o F: HEAT oil in a 4-quart saucepan or deep fryer.
scrub potatoes, get rid of skin blemishes and deep eyes. For a flat cutting surface to start with, slice potatoes from both ends. Potatoes should be sliced as thinly as possible—about 1/16 inch—either by hand, using a mandoline (a manual slicer), or in a food processor with a 2mm blade. Put the slices in a big dish and cover with cold water. Combine black pepper and sea salt.
RINSE potatoes of water. To avoid spattering while frying, squeeze off excess water using a salad spinner and then wipe with paper towels. Paper towels are used to line a 4-quart dish.
2 to 3 batches of potatoes should be deep-fried for 3 to 5 minutes, occasionally tossing the potatoes.Drain on paper towels. Sprinkle hot chips with some of salt and pepper mixture; toss to coat evenly. Repeat with remaining potatoes.
